SUYA (WEST AFRICAN SPICY PEANUT KEBABS)
Suya is a delicacy, West African meat kebab, coated in (local) spices and ground peanuts. The meat of choice is usually beef but can also be made from chicken or veal. It is usually cooked over charcoal similar to barbecue, a delicious street food that has found its way from the streets and into our home.
More information & tips
1) You can omit the oil in this recipe and use a little water instead. Not too much water though, a tbs or 2 will do just to make the spices cling to the meat.
2) TIP: I usually buy fresh meat, then freeze for about 2 hours until slightly 'solid' so that it is easier to slice the thin strips or you can ask your butcher to slice the meat for you.
