CRISPY POTATO FRITTERS (POTATO BHAJIAS)
Potato bhajias (fritters) are basically just slices of potatoes dipped in a spiced batter then deep fried. It is another popular street food in East Africa. Usually found in most food vendors stalls especially during the month of Ramadhan. These are easy to cook and taste delicious with a chutney dip or any other (hot) dip/s of your choice. Can be served anytime of the day.

1) The secret to crispy fried bhajias is presoaking the potato slices in salted water. (Through the process of osmosis) the potatoes loose their moisture before cooking hence crisp up when cooked.
2) If you like them really crunchy, mix 1 tsp of corn and rice flour in the batter.
3) To give the bhajis a subtle zingy flavor, add some lemon juice in the batter.
