ZANZIBAR SESAME BREAD/SIMSIM BREAD/MKATE WA UFUTA
(COOKED ON A STOVE/ GRILL)

This yeasted salty but deliciously sweet bread is a popular bread as well as delicacy in Zanzibar. It can be served accompanying any stews or curries. It can be made over a jiko or using a grill. Here is a method cooking it on top of the stove and then browned under a grill.

NOTE: When the batter is ready to be cooked, DO NOT knock it down or mix it before cooking.
P/S: You might need 2-3 frying pan when cooking on the stove & grill i.e As one bread is cooking on top of the stove, another is browning in the oven.
1. Some water in a small bowl, about 1 cup mixed with ¼ tsp salt.
2. Put the sesame seeds in a bowl at easy reach/the side of the stove.

1) To prevent the breads catching in the pan, dedicate the two frying pans to only be used to make the sesame breads. Do not used them for any other purpose.
