SHITO- GHANIAN BLACK PEPPER SAUCE
Shito is a Ghanian (hot) black pepper sauce and usually accompanies alot of Ghanian dishes. Can have variations in the ingredients and/or the preparation method, but it is most certainly hot all the time!
More information & tips
1) You can substitute the crayfish with prawns/shrimp or use a mix of the two crustaceans.
2) Reduce or increase the amount of scotch bonnet pepper to make the shito less or more hot, respectively.
3) To maximize the shelf life of the shito, especially if you are making it for commercial purposes, OMIT the tomato puree as it will reduce the shelf life of the shito. If you like/use tomatoes in your shito, store it in the fridge to reduce it becoming moldy.
4)To prolong the shelf life of your shito, always make sure the jar is closed with a tight fitting lid, whether you are keeping it in or outside the fridge. This reduces the chances of contamination with air-borne bacteria, making your shito moldy faster.
