SAUTEED AMARANTH (EAST AFRICAN STYLE MCHICHA)
Amaranth (known as Mchicha in Kenya -East Africa) is known by very many different names in different parts of the world. It is considered a healthy vegetable green and full of nutrients including iron, vitamins,calcium etc. Usually served as a part of a main meal for lunch or dinner. The sauteed amaranth (mchicha wa kukaangwa) is usually serves with East African staple corn meal (ugali) or rice with some meat/offals. The simplicity of this recipe will amaze you!
