1) You can replace the fresh coconut milk with coconut milk powder mixed in water. Follow your packet instruction to produce the required amount as stipulated in the recipe.
2) Omitting the tomatoes and tomato paste produces a 'whiter' sauce and does not have the reddish tint produced by the tomatoes. The tomatoes are usually omitted if the dish is to accompany chapati or sweet deep fried bread (Mahambri) in the morning. Tomatoes are usually added if to be served with rice.
