POTATOES IN TOMATO SAUCE/VIAZI VYA ROJO
This is a popular snack in East Africa, particularly in Mombasa, Kenya. Due to having a wet sauce ,it can also be served accompanying other breads, like mahambri and chapati/paratha. This is such a simple recipe but its taste will amaze you. Try it with chevdo/chauro, my favorite at Babu Kachri!

1) You can spice the sauce by adding some spices like cumin powder or garam masala (optional). This can be added together with the ginger/garlic/turmeric/ginger paste.
