MOKIMO : EAST AFRICA MASHED POTATO WITH MAIZE,PEAS & GREENS
Mokimo (or Mukimo) is a delicious mash of potatoes, maize,peas and spinach (or pumpkin leaves). It is usually green/sage in colour. This food is mainly cooked by the Gikuyu tribe (Kenya, East Africa) although it can be enjoyed by anyone and can be eaten at anytime of the day and served with stews,fried meat, kale/sukuma wiki etc.
NOTE: There are 2 variations in the end stages of cooking this dish. One method is just adding and mixing the butter/margarine into the mashed potatoes/maize/greens after mashing the contents (you don't use the onions in this method). The second way is sauteing the onions then adding and folding in with the mashed contents/mixture. Either way, it tastes just as nice! Lets start:

1) Mokimo is usually served with meat or chicken stew. Or fried meat and kales/sukuma wiki.
2) The final product should be light in colour, neither dry nor sticky. Depending on how much greens is used, the mokimo should be a light green in colour.
