Green banana commonly known as Matoke is a famous dish in East Africa, particularly in Uganda. It can be cooked in many different ways so there is a lot of variation of this recipe. This is our own Swahili version of green banana/matoke in spiced tomato sauce.

1) To ensure that the meat is soft at the end, make sure it is fully cooked and soft when cooking it separately before assembling together.
2) Make sure you buy green bananas that are raw and hard, otherwise they might mash during the cooking process. The size will also determine how fast they cook. The small the size the faster they cook. Adjust the liquid quantity and cooking times accordingly.
3) In Uganda, green bananas is refered to as 'Matooke'.
4)To prevent the peeled bananas from discolouring, add some lime or lemon juice in the water before putting them in (after peeling).
