Jollof rice is a popular West African rice dish usually served in important occasions like parties or weddings. However you can also serve it anytime you like in the comfort of your own home! It is usually served with fried fish but you can serve it with anything or even just eaten on its own. Always works a treat!

1) To ensure that you do not end up with a rice mash, add the water/stock bit by bit while checking if the rice is fully cooked. The liquid will include the total liquid from the blended pepper mix and any water added. Adjust the liquid according to the type of rice used.
2) If you prefer to parboil your rice, reduce the liquid stated in this recipe even further because less liquid will be required to cook it with the tomato stew.
3) Gently handle the rice after adding it to the stew during the cooking process and when serving to prevent it breaking.
4) Vary it up by adding sweetcorn (or a vegetable of your choice) - a very deceitful way of making the kids have their vegetables!
