Spiced potatoes deep fried in gram flour batter -popularly known as 'viazi karai' (in Kenya) or 'kachori za viazi vya madonge' (Zanzibar/Tanzania) is a popular snack in East Africa. It can be eaten as a snack bite but can also be served as a side dish. Can be eaten anytime of the day and served with anything. In East Africa, it is usually serve with Green coconut chutney as accompaniment.

MORE INFORMATION & TIPS
1) To ensure that the potatoes do not break apart during the frying process, ensure the oil is very hot before lowering them in.
2) In Zanzibar/Tanzania, the batter is made out of gram flour only while in Kenya, it is made out of a mix of gram and plain flour. Neither is the batter seasoned but the seasoning provided in our recipe gives this dish a different culinary dimension. Try it to believe it!
3) Wet the knife when cutting the potatoes to stop them becoming sticky and crumbly.
