I love okra and eat it with so many meals or sometimes as a healthy and fulfilling snack! It goes well with rice as well as breads like chapati and roti. We present a no fuss, simple and easy recipe that can be cooked from just 4 ingredients if you so wish (the okra,tomato and onion and some little oil!- everything else is just extras.). This is a recipe for fried cut okra rings cooked in onion and tomato base, a dish that you can cook very fast using frozen okra as well. Hope you like it as much as we do.

1) You can substitute the spices listed above with your own favorite spices to make the tomato sauce base personal!
2)When frying the okra, the final colour will depend on how long you fry them for. The longer you fry them, the deeper their colour change. It all boils down to personal preference. Some will fry them for longer to a golden brown colour, I prefer them to still have their green tinge. So you do you!
3) If the okra gets too dry during cooking, add a little water (1-2 tbs).
