FRIED CASSAVA IN SPICED BATTER/MUHOGO WA KARAI
Cassava deep fried in gram flour batter (cassava deeped in besan coating) - popularly known as 'muhogo wa karai' (in Kenya) is similar to Fried spiced potatoes (Viazi Karai) and is cooked in a similar way. This is a popular street snack but can also be served as a side dish. Can be eaten at anytime of the day and served with anything.

More information & tips
1) You can make the batter thick by adding less water OR you can make it thicker by adding more water. This is optional. A thinner batter will give you a crisp bite!
2)Do not cut the cassava chunks are very thick, they will take longer to cook. You could par boil the cassava slightly to ensure it cooks well after frying, but this is not essential.
