EAST AFRICA CUSTARD MITAI (MITAI WITHOUT COCONUT MILK)
Mitai are a favorite breakfast snack in Mombasa (Kenya). It is a deep fried diamond shaped cut pieces of beignet usually made with coconut milk (the authentic Swahili way) and sugar coated making it very sweet and an accompaniment to any drink. I would therefore like to share this personal recipe for cooking the same bites but without the addition of coconut milk.
