Chilli con carne simply means meat with chilli. The meat (usually beef) can be minced (chilli con carne) or from whole cuts of meat (texas style chilli). In addition to the main ingredient, it may also contains tomatoes, beans and some sort of spices.

1) When browning the mince, make sure you use a high heat to prevent the meat producing any liquid during the frying session. Use a large enough pan so that the mince is quickly and evenly browned.
2) For a healthy low fat vegetarian version, substitute the minced meat with quorn mince.
