CHICKPEA FUDGE: BESAN BURFI
Besan Burfi (barfi) which simply translated into chickpea flour fudge (or simply Besan fudge) is a popular Indian sweet made of chick pea flour and ghee, flavored with ground cardamom spice. It is usually cooked during the Hindu festivals (Holi) but it is so delicious and easy to cook that I cook it regularly and serve it anytime! In East Africa it is known as Labania (za unga wa dengu).

1)The most important step in this recipe is the roasting/cooking the chickpea flour. If the flour is not properly cooked, the besan fudge will have a bitter/raw taste (kaccha in Hindi). Make sure it is roasted over a low heat for a minimum of at least 30 minutes. Also, make sure to constantly stir the flour mixture so that it is evenly cooked/roasted.
