Sfeeha or sometimes known as Lahm bi ajin (simply translates as (red) meat in dough) is a small version of a pizza with a minced meat topping. They make a tasty and filling lunch/dinner on its own or as part of a feast.

NOTE: We start by preparing the pine nut and the meat topping first so that there is a continuous demonstration/streamline of any one particular item (to avoid any confusion/s) but in reality, you prepare the dough and while it is resting, you prepare the toppings.

PREHEAT THE OVEN TO 200C.
ASSEMBLING AND COOKING THE PIZZA.
1) The dough is sometimes folded to create a pocket so that the topping is enclosed within the dough as opposed to the open pizza presented here.
2) If your baking tray is not seasoned, you can lightly oil it before adding the pizza base or lightly sprinkle with corn meal or semolina flour to prevent the pizza sticking onto it and becomes easier to remove once cooked.
