ACKEE & SALTFISH
This is a popular and delicious Caribbean dish. The ackee has a similar texture to egg yolk (but the taste is heavenly!) so I serve mine in the morning usually on a lazy Sunday morning. A definite treat with dumplings but can be served anytime and with anything!

HOW TO COOK ACKEE WITH SALTFISH
1) Ackee is very soft so make sure that you handle it gently when mixing in the dish, otherwise it will completely disintergrate and you end up with a mash!
